I have fond memories of eating anchovies with Dad at the kitchen table. As I opened the tin of anchovies for an afternoon snack, I noticed that they are a product of Morocco. I have been a fan of Moroccan cuisine, and didn’t even know it!
According to a Smithsonian Magazine article about the Moroccan anchovy industry, Morocco leads the world in canned anchovies, and is home to the world’s largest anchovy salting facility. An anchovy company owner, interviewed for the article, noted that the consumption of anchovies is declining among younger generations. He said, ‘”Traditional foods are getting left behind by the young for hamburgers and other fast food.”‘
Huh . . . I wonder what Sam the Hamburger Man would have thought of that?
